Ingredients
  

  • 450 grams boneless chicken thighs (cut into 2 inch piece)
  • 1 tablespoon curds or greek yogurt (whisked)
  • 8 garlic cloves (crushed)
  • ½ inch ginger (crushed)
  • 1 teaspoon red chilli flakes
  • 1 teaspoon cumin powder
  • 1 teaspoon meat masala
  • 1 teaspoon kashmiri chilli powder
  • ¼ teaspoon salt
  • 1 teaspoon crushed pepper

Method
 

  1. In a large bowl, combine the chicken thighs with Greek yogurt, crushed garlic, crushed ginger, red chilli flakes, cumin powder, meat masala, Kashmiri chilli powder, salt, and crushed pepper. Mix well to ensure the chicken is evenly coated.
  2. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally for 2-4 hours for maximum flavor.
  3. Preheat your air fryer to 375°F (190°C).
  4. Lightly spray the air fryer basket with cooking oil. Arrange the marinated chicken pieces in a single layer in the basket, ensuring not to overcrowd it. Cook in batches if necessary.
  5. Air fry for 15-20 minutes, flipping the chicken halfway through, until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  6. Once cooked, remove the chicken bites from the air fryer and serve hot with your favorite chutney or dip.

Notes

- For extra tender chicken, marinate overnight. Even 30 minutes makes a difference, but longer is better. - Do not overcrowd the air fryer basket; cook in batches to ensure even crisping and thorough cooking. - Chicken is safely cooked when its internal temperature reaches 165°F (74°C) at its thickest part. I found that using a meat thermometer prevents dry chicken.
