Air Fryer Shrimp Tacos: Quick & Delicious!

Ingredients
  

  • 1 tbsp vegetable oil
  • 24 jumbo frozen (raw) shrimp (peeled, deveined and without tail)
  • 1 1/2 tsp light brown sugar
  • 1 tsp chipotle chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1 cup fresh avocado (sliced)
  • 1 cup purple cabbage (chopped)
  • 1/2 cup green salsa

Method
 

  1. Thaw the shrimp according to package directions. A quick thaw under cold water works well.
  2. Lightly brush your air fryer basket with vegetable oil. Preheat the air fryer to 400°F (200°C).
  3. In a small bowl, mix together the brown sugar, chipotle chili powder, smoked paprika, garlic powder, and salt.
  4. Pat the shrimp completely dry with paper towels. Place the dry shrimp in a zippered plastic bag, pour the seasoning mixture over them, and shake well to coat evenly.
  5. Arrange the seasoned shrimp in a single layer in the preheated air fryer basket. You might need to cook in two batches. Cook for 3-4 minutes.
  6. Flip the shrimp and cook for an additional 3-4 minutes until they are firm to the touch and slightly shrunk.
  7. While shrimp cooks, mix together the green salsa (and optionally, a dollop of sour cream for a sauce). Serve the air-fried shrimp with your favorite tortillas, sliced avocado, chopped purple cabbage, and a squeeze of lime.
