Ingredients

  • 2 6 oz petite sirloin steaks
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 12 medium shrimp (peeled, deveined, tail removed, raw)
  • 2 tbsp butter
  • 2 cloves garlic (finely chopped)
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 2 tbsp fresh chives (chopped)

Method

  1. Set the steaks on a plate and allow them to warm up a bit out of the fridge, about 20 minutes. Sprinkle the steaks evenly on both sides with 1/2 teaspoon salt and pepper.
  2. Preheat the air fryer to 400 degrees F for about 5 minutes.
  3. Place the steaks in the air fryer basket and cook for 6 minutes. Flip the steaks over and cook for an additional 6 minutes. Check the internal temperature of the steaks. Remove the steaks once the internal temperature reaches 145 degrees F - which is about a medium cook.
  4. While the steak is cooking in the air fryer, prepare the shrimp cream sauce.
  5. Melt the butter in a non-stick skillet over medium-high heat. Add the shrimp and cook for about 2 minutes, until the shrimp starts to turn pink, stirring the shrimp often. Stir in the garlic and cook for an additional minute, until the garlic is fragrant.
  6. Add the wine and cream and bring to a simmer. Stir in the remaining 1/2 teaspoon of salt and the chives and remove from heat.
  7. Serve the steaks topped with the shrimp cream sauce.

Notes

- Ensure steaks are at room temperature before air frying for even cooking.
- Do not overcrowd the air fryer basket to allow for proper circulation and searing.
- Adjust cooking time based on steak thickness and desired doneness.
- For a richer sauce, use a good quality dry white wine.
