- Preheat your air fryer to 380°F (193°C) for 5 minutes.
- In one bowl, beat the egg. In another bowl, combine the breading and grated parmesan cheese.
- Season the avocado wedges with salt and pepper. Dip each wedge into the beaten egg, ensuring it's fully coated, then gently coat with the breading/parmesan mixture, shaking off any excess.
- Spray all sides of the coated avocado wedges lightly with oil spray.
- Arrange the coated avocado wedges in a single layer in the air fryer basket, cooking in batches if necessary.
- Air fry at 380°F (193°C) for 5-8 minutes. Flip the wedges gently, spray any dry spots with oil spray, and continue to air fry for an additional 2-5 minutes until crispy and golden brown.

- For best results, use avocados that are ripe but still firm. They should yield slightly to gentle pressure but not be mushy.
