Ingredients

  • 1 pound broccoli (, cut into bite sized pieces)
  • 2 tablespoons oil ( (approximately))
  • 1/2 teaspoon garlic powder
  • salt (, to taste)
  • fresh cracked black pepper (, to taste)
  • 3-4 slices bacon (, cooked & cut into bite sized pieces )
  • 1/2 cup dried fruit of choice ((dried cranberries, apricots, raisins, etc. – cut larger fruit into 1/2-inch pieces))
  • 1/4 cup roasted nuts of choice ((pecans, almonds, cashews, etc. – chop larger nuts if desired))
  • 1/4 cup minced red onion
  • 1/3 cup mayonnaise

Method

  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, toss broccoli florets with oil, garlic powder, salt, and pepper until evenly coated.
  3. Arrange broccoli in a single layer in the air fryer basket. Air fry for 8-10 minutes, or until tender and slightly crispy, shaking the basket halfway through.
  4. In a large bowl, combine the cooked bacon bits, dried fruit, roasted nuts, and minced red onion.
  5. Add the air-fried broccoli and mayonnaise to the bowl. Gently toss everything together until well combined.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

- For extra crispy broccoli, ensure it's completely dry before tossing with oil and seasonings.
- Don't overcrowd the air fryer basket; cook in batches if necessary.
- Adjust the amount of dried fruit and nuts to your preference.
- For a tangier dressing, add a splash of apple cider vinegar.
