Ingredients
  

  • 4 8-inch flour tortillas
  • 1 1/2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1/2 cup salsa
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup taco sauce
  • diced tomato, avocado and sour cream for serving

Method
 

  1. Microwave the rice according to package directions, or prepare your favorite rice. You'll need about 1 1/2 cups, cooked.
  2. In a large bowl, mix together the cooked rice, black beans, corn, salsa, lime juice, and salt until well combined.
  3. Fill each flour tortilla with a generous cup of the filling and top with about 1/4 cup of the shredded Mexican blend cheese.
  4. Fold the burritos to seal in the filling tightly.
  5. Line your air fryer basket with lightly oiled foil or parchment paper.
  6. Place two burritos in the basket in a single layer. Top each one with a couple of tablespoons of taco sauce and 1/4 cup of shredded cheese.
  7. Air fry the burritos at 350 degrees F for 8-10 minutes, until the cheese on top is completely melted and bubbly.
  8. Repeat until all burritos are cooked. Serve immediately with diced tomato, avocado, and sour cream, if desired.

Notes

- Don't overfill your tortillas: too much filling makes them hard to fold and prone to bursting during air frying. A generous cup is just right.
- For extra crispiness, lightly brush the outside of the folded burritos with a touch of oil (like olive or avocado oil) before placing them in the air fryer.
- To ensure even cooking and melting, cook burritos in a single layer in the air fryer basket. Work in batches if necessary.
- If you're making these ahead, you can assemble the burritos, wrap them tightly in foil or plastic wrap, and refrigerate for up to 2 days. Air fry as directed, adding a few minutes to the cooking time if starting from cold. For food safety, make sure any meat fillings reach 165°F (74°C).
