Ingredients
  

  • 12 ounces radishes
  • 2 teaspoons avocado oil (divided)
  • 1 clove garlic (grated or finely minced)
  • pinch salt
  • 2 tablespoons vegan parmesan cheese (plus a few shakes more)
  • 1 teaspoon chopped green onions (optional garnish)

Method
 

  1. Wash and thoroughly dry the radishes. Remove their tops and tails. Cut them into equal-sized pieces: quarter extra-large radishes, halve medium ones, and leave very small radishes whole.
  2. Place the prepped radishes into a mixing bowl and toss them with 1 teaspoon of avocado oil.
  3. Transfer the oiled radishes to your air fryer basket. Air fry at 400°F for 7 minutes.
  4. While the radishes are cooking, grate or finely mince the garlic into the mixing bowl. Add the remaining 1 teaspoon of avocado oil and a pinch of salt to the bowl.
  5. Once the first air fry is done, return the radishes to the mixing bowl. Toss them thoroughly with the garlic, oil, and salt mixture until evenly coated.
  6. Sprinkle 1 Tablespoon of vegan parmesan cheese over the radishes in the bowl. Gently shake the bowl to redistribute and coat any bare spots, then add another 1 Tablespoon of vegan parmesan.
  7. Carefully pour the seasoned radishes back into the air fryer basket. Sprinkle a little extra vegan parmesan cheese on top for an extra crust.
  8. Air fry again at 400°F for 4 to 5 more minutes.

Notes

- Don't overcrowd the air fryer basket; cook in batches if necessary to ensure proper air circulation and crispy results.
- For a spicier kick, add a pinch of red pepper flakes with the garlic and oil.
- Store leftover air fryer radishes in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for a few minutes to regain crispness.
