Ingredients

  • 1 tablespoon oil (for cooking filling)
  • 1 pound ground beef
  • 1/2 medium onion (diced)
  • 1 ounce taco seasoning (1 packet - 3 Tablespoons)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 8-12 corn or flour tortillas (about 5—7 inch sized)
  • Oil (for spraying)
  • Guacamole
  • Shredded Lettuce or Cabbage

Method

  1. Heat 1 Tbsp oil in a skillet over medium-high heat. Add ground beef and onion, breaking up the beef. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain excess grease.
  2. Stir in the taco seasoning and 1/2 cup water. Bring to a simmer and cook for 2-3 minutes until the sauce has thickened, stirring occasionally.
  3. Remove from heat. Stir in the shredded cheddar cheese and 1/2 cup sour cream until the cheese is melted and the mixture is well combined. Set aside.
  4. Warm the tortillas slightly to make them pliable.
  5. Spoon about 2 tablespoons of the beef mixture onto the center of each tortilla. Roll up tightly, tucking in the ends if possible. Place seam-side down.
  6. Lightly spray the taquitos with oil. Place them in the air fryer basket in a single layer. Air fry at 380°F (190°C) for 6-10 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve immediately with your favorite toppings like guacamole, salsa, sour cream, shredded lettuce, and lime wedges.

Notes

- Warm tortillas before rolling to prevent cracking.
- Don't overcrowd the air fryer basket; cook in batches for maximum crispiness.
- Adjust taco seasoning to your spice preference.
- Get creative with toppings: try pico de gallo, jalapeños, or cotija cheese.
