Ingredients
  

  • 1 pound white fish fillets (cod, halibut, tilapia, etc.)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 teaspoon garlic powder
  • 1 cup breadcrumbs (panko, crushed pork rinds, almond flour etc.)
  • 2 eggs
  • Cooking spray

Instructions
 

  • Preheat your air fryer to 380°F (193°C) for 4 minutes.
  • Cut thawed white fish fillets into 1-inch wide strips. Pat them thoroughly dry.
  • Season the fish strips evenly with kosher salt, black pepper, and garlic powder.
  • Dip each seasoned fish strip into beaten eggs, let excess drip off, then coat generously in breadcrumbs, pressing to adhere.
  • Lightly spray the air fryer basket/tray with cooking spray.
  • Arrange breaded fish sticks in a single layer in the basket (cook in batches if needed). Spray all sides generously with cooking spray.
  • Air fry at 380°F (193°C) for 6 minutes. Flip the fish sticks and spray any dry spots.
  • Continue air frying for another 4-8 minutes, or until golden brown and crispy.

- Use cod, halibut, or tilapia for the best flaky texture.
- Pat the fish VERY dry before seasoning and coating for maximum crispiness.
- Don't overcrowd the air fryer basket; cook in batches if necessary.
