Ingredients
  

  • 1 pound white fish fillets (cod, halibut, tilapia, etc.)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 teaspoon garlic powder
  • 1 cup breadcrumbs (panko, crushed pork rinds, almond flour etc.)
  • 2 eggs
  • Cooking spray

Method
 

  1. Preheat your air fryer to 380°F (193°C) for 4 minutes.
  2. Cut thawed white fish fillets into 1-inch wide strips. Pat them thoroughly dry.
  3. Season the fish strips evenly with kosher salt, black pepper, and garlic powder.
  4. Dip each seasoned fish strip into beaten eggs, let excess drip off, then coat generously in breadcrumbs, pressing to adhere.
  5. Lightly spray the air fryer basket/tray with cooking spray.
  6. Arrange breaded fish sticks in a single layer in the basket (cook in batches if needed). Spray all sides generously with cooking spray.
  7. Air fry at 380°F (193°C) for 6 minutes. Flip the fish sticks and spray any dry spots.
  8. Continue air frying for another 4-8 minutes, or until golden brown and crispy.
