Ingredients
  

  • 4 ounces pepperoni slices, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce, plus extra for dipping
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup bell peppers, chopped
  • 15 egg roll wrappers
  • water, for sealing the wrappers
  • oil spray, for coating the egg rolls
  • 1/2-1 cup optional dipping sauce of choice (marinara, ranch, bbq sauce, etc.)

Method
 

  1. Combine the chopped pepperoni, shredded mozzarella cheese, 1/2 cup marinara sauce, Italian seasoning, and chopped bell peppers in a bowl. Mix well.
  2. Spoon about 2 tablespoons of filling onto the center of each egg roll wrapper. Fold the bottom edge over the filling, then fold in the sides. Brush the top corner with water and roll up tightly to seal.
  3. Lightly spray or brush the outside of each egg roll with oil. Arrange in a single layer in your air fryer basket (cook in batches if necessary).
  4. Air fry at 380°F (193°C) for 8 minutes. Flip the egg rolls and continue to air fry for another 4-8 minutes, or until golden brown and crispy.
  5. Let the egg rolls cool slightly as the filling is very hot. Serve immediately with extra marinara sauce or your favorite dipping sauce.

- For extra crispy rolls, ensure they are not overcrowded in the air fryer basket.
- Adjust cooking time based on your air fryer model and wrapper thickness.
