- Cut the red bell peppers in half, top to bottom. Carefully trim out the seeds and ribs from the inside.
- Place the four pepper halves, cut side down, in the air fryer basket. Cook at 375°F (190°C) for 10 minutes.
- Heat a non-stick skillet over medium-high heat. Add ground sirloin and cook until no longer pink, breaking it up.
- Stir in the salsa and taco seasoning. Allow to simmer for a few minutes.
- Stir in the corn, black beans, and cream cheese. Remove from heat and stir until cream cheese is fully combined.
- Remove peppers from air fryer and fill each half generously with the mixture. Return to air fryer basket, filling side up.
- Cook at 400°F (200°C) for 5 minutes. Top with shredded cheese and cook for another 1-2 minutes until melted.
- Serve hot.

- Use slightly firmer peppers for best results.
- Don't overfill the peppers, as the filling will expand slightly.
