Easy Air Fryer Stuffed Peppers Recipe

Ingredients
  

  • 2 red bell peppers
  • 1 lb ground sirloin
  • 1 envelope taco seasoning
  • 3/4 cup salsa
  • 1 cup black beans (drained)
  • 1 cup corn (drained)
  • 1/2 cup cream cheese
  • 1/2 cup shredded Mexican cheese blend

Method
 

  1. Cut the red bell peppers in half, top to bottom. Carefully trim out the seeds and ribs from the inside.
  2. Place the four pepper halves, cut side down, in the air fryer basket. Cook at 375°F (190°C) for 10 minutes.
  3. Heat a non-stick skillet over medium-high heat. Add ground sirloin and cook until no longer pink, breaking it up.
  4. Stir in the salsa and taco seasoning. Allow to simmer for a few minutes.
  5. Stir in the corn, black beans, and cream cheese. Remove from heat and stir until cream cheese is fully combined.
  6. Remove peppers from air fryer and fill each half generously with the mixture. Return to air fryer basket, filling side up.
  7. Cook at 400°F (200°C) for 5 minutes. Top with shredded cheese and cook for another 1-2 minutes until melted.
  8. Serve hot.

- Use slightly firmer peppers for best results.
- Don't overfill the peppers, as the filling will expand slightly.
- For extra spice, add a pinch of cayenne pepper to the filling.
