Ingredients
  

  • 4 medium-sized tomatoes, diced in medium chunks (about 4 cups)
  • 2 small-sized garlic cloves, minced or zested with a Microplane zester
  • ¼ cup fresh basil, cut with kitchen shears or by hand, plus more for garnish
  • 2 teaspoons extra virgin olive oil, plus extra for lightly oiling baguette, if needed
  • 2 teaspoons balsamic vinegar
  • pinch salt
  • Dash of pepper
  • 1 baguette, cut into ½ inch slices

Method
 

  1. In a medium-sized bowl, combine chopped tomatoes, garlic, basil, extra virgin olive oil, balsamic vinegar, salt, and pepper.
  2. Cover the bowl and refrigerate for a few hours to allow the flavors to meld. (If short on time, skip this step.)
  3. Once ready, taste the mixture and adjust seasoning with additional vinegar or salt if needed.
  4. Toast the crostini using an air fryer, grill, or oven.
  5. To toast in the air fryer, lightly oil baguette slices, place in the air fryer, and cook at 380 degrees for 3 to 4 minutes, flipping halfway.
  6. To toast on the grill, heat to 400 degrees, lightly oil slices, and grill each side for a few minutes until brown.
  7. To toast in the oven, preheat to 350 degrees, arrange slices on baking sheets, lightly oil, and bake for 15 to 20 minutes, flipping halfway.
  8. To assemble, use a slotted spoon to top crostini with the tomato mixture. Garnish with fresh basil and serve on a platter.

Notes

- For the most vibrant flavor, use peak-season, ripe tomatoes. Heirloom varieties can add an extra layer of complexity.
- Don't overcrowd the air fryer or oven when toasting the baguette slices; this ensures even crisping.
- Make the tomato mixture up to 4 hours in advance and store it in the refrigerator. Assemble the bruschetta just before serving to prevent the bread from getting soggy. Any leftovers can be stored in an airtight container for up to 2 days.
