- 2 large eggs
- 2 tablespoons cottage cheese
- 2 tablespoons butter, melted
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon pink himalayan or sea salt
- 1 cup shredded cheddar cheese
- 2 tablespoons butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
Preheat oven or air fryer to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
For the biscuits: In a medium bowl, whisk together the eggs, cottage cheese, and 2 tablespoons of melted butter. Set aside.
In a separate bowl, whisk together the almond flour, baking powder, and salt. Add the dry mixture to the wet ingredients and stir to combine. The mixture will be wet. Stir in the shredded cheddar cheese.
Drop batter into 8-10 dollops onto the prepared baking pan, about 3 tablespoons each, ensuring even spacing.
Bake for 12-14 minutes or until biscuits turn golden brown.
For the butter glaze: In a small bowl, add the remaining 2 tablespoons of melted butter and stir in the garlic powder, and dried parsley. Brush this mixture onto the warm biscuits.
- Don't overmix the batter once the dry ingredients are added; stir just until combined to keep the biscuits tender.
- For an extra crispy crust, brush the biscuits with a little extra melted butter before baking.
- If your biscuits aren't browning, a quick trick I use is to finish them under the broiler for 1-2 minutes, watching carefully to prevent burning.
