Method
- Divide the sausage into 5 or 6 equal portions.
- Flatten each sausage portion into a thin patty and wrap around a peeled hard-boiled egg.
- Dip each sausage-wrapped egg first into the beaten egg mixture, then into the crushed pork rinds.
- Lightly spray the outside of the coated eggs with oil spray.
- Air fry at 400°F (200°C) for 12-16 minutes, turning halfway through.
- Let cool slightly, then cut in half to reveal the perfectly cooked egg yolk. Serve hot with mustard or hot sauce!
