Ingredients
  

  • 1 bagel (sliced in half)
  • 2 tablespoons marinara sauce
  • 6 slices vegan pepperoni
  • 1/2 tablespoon chopped bell pepper (any color)
  • 1/2 tablespoon chopped yellow onion
  • 2 heaping Tablespoons vegan mozzarella cheese
  • pinch fresh basil (or chives, finely chopped)
  • Sprinkling of vegan parmesan cheese (optional)

Method
 

  1. TO AIR FRY: Toast bagel halves cut side up in air fryer at 370°F for 2 minutes. Remove.
  2. Top each bagel half with marinara, vegan pepperoni, bell peppers & onions, and vegan cheese. Return to air fryer.
  3. Air fry at 370°F for 4-5 minutes, until cheese is melty. Check at 4 minutes.
  4. TO BAKE: Preheat oven to 425°F. Bake sliced bagels cut side up for 5 minutes. Remove and turn oven to broil.
  5. Top each bagel half with marinara, vegan pepperoni, bell peppers & onions, and vegan cheese. Return to oven.
  6. Broil until cheese has melted, roughly 2-4 minutes. Watch carefully to prevent burning.
  7. Carefully remove bagel halves from air fryer or oven. Let cool for a couple of minutes before eating.
  8. Optionally, top with a pinch of chopped fresh basil or chives, and a sprinkling of vegan parmesan cheese.

Notes

- For an extra crispy bagel, toast the halves an additional minute before adding toppings.
- If you don't have vegan pepperoni, try adding other vegan-friendly toppings like mushrooms, olives, or spinach.
- To store leftovers, wrap cooled pizza bagels tightly and refrigerate for up to 2 days. Reheat in the air fryer at 350°F for 3-5 minutes for best results, or in the oven until warmed through.
