Ingredients
  

  • 2 lb Yuca (cassava)
  • 2 tbsp Avocado oil
  • 1 tsp Baking powder
  • 1/2 tsp Garlic powder
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 3/4 cup Sour Cream
  • 2 tbsp Mayonnaise
  • 1/3 cup Fresh cilantro
  • 1 tbsp Lime juice

Method
 

  1. Peel the yuca root. Cut into fry shapes, about 1/2 inch thick and 2-2.5 inches long.
  2. Boil yuca fries in salted water for 8-10 minutes until tender. Drain and pat VERY dry.
  3. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  4. Toss yuca fries with avocado oil, baking powder, garlic powder, salt, and pepper in a large bowl.
  5. Arrange fries in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  6. Make the crema: Blend sour cream, mayo, cilantro, lime juice, and seasonings until smooth.
  7. Serve the crispy yuca fries immediately with the cilantro lime crema for dipping.

Notes

- Ensure yuca is VERY dry after boiling for maximum crispiness.
- Don't overcrowd the baking sheet; use two if necessary.
