Ingredients
  

  • 1 medium Eggplant, sliced
  • 2 tbsp Olive oil
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 cup Grated parmesan cheese
  • 2 tsp Italian seasoning

Method
 

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplant crosswise into circles, about 3/8 to 1/2 inch thick. Pat the slices completely dry with paper towels.
  3. Brush both sides of the eggplant slices with olive oil. Sprinkle generously with sea salt, black pepper, Italian seasoning, and grated parmesan cheese on both sides.
  4. Arrange the seasoned eggplant slices in a single layer in the air fryer basket. Cook for 10-12 minutes, until tender and the cheese is golden brown and crispy. Repeat in batches if necessary.
