Ingredients
  

  • 3 cups cooked lasagna, cooled
  • 15 egg roll wrappers
  • 1 cup shredded mozzarella cheese
  • Water, for sealing the wrappers
  • Oil spray, for coating the egg rolls
  • 1/2-1 cup dipping sauce of choice (marinara, ranch, bbq sauce, etc.)

Method
 

  1. Cook lasagna and let it cool completely. Cut into small, 2-tablespoon sized pieces.
  2. Lay out an egg roll wrapper. Place 2 tbsp lasagna filling and 2 tsp mozzarella cheese on one corner. Fold the wrapper like a burrito, tucking in the sides, then roll tightly to the end. Moisten the final corner with water to seal.
  3. Lightly spray or brush the outside of each egg roll with oil for crispiness.
  4. Arrange egg rolls in a single layer in your air fryer basket. Cook at 380°F (190°C) for 12-16 minutes, flipping halfway through, until golden brown and crispy.
  5. Let the rolls cool slightly as the filling will be very hot. Serve immediately with your favorite dipping sauce.

Notes

- Ensure your lasagna filling is completely cool and not too wet before assembling.
- Don't overfill the wrappers; this makes them hard to seal and prone to bursting.
- For extra crispy rolls, ensure a good coating of oil spray.
