Method
- Cook lasagna and let it cool completely. Cut into small, 2-tablespoon sized pieces.
- Lay out an egg roll wrapper. Place 2 tbsp lasagna filling and 2 tsp mozzarella cheese on one corner. Fold the wrapper like a burrito, tucking in the sides, then roll tightly to the end. Moisten the final corner with water to seal.
- Lightly spray or brush the outside of each egg roll with oil for crispiness.
- Arrange egg rolls in a single layer in your air fryer basket. Cook at 380°F (190°C) for 12-16 minutes, flipping halfway through, until golden brown and crispy.
- Let the rolls cool slightly as the filling will be very hot. Serve immediately with your favorite dipping sauce.
