Ingredients

  • 1 pound whole carrots (orange or rainbow), trimmed and cut into 2-inch pieces (typically about 6 to 8 carrots)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt or kosher salt
  • ½ teaspoon freshly ground black pepper
  • Parchment paper or a silicone baking mat

Method

  1. Preheat the oven to 425°F (218°C). Line a large baking sheet with parchment paper or a silicone baking mat. If using an air fryer or convection oven, preheat to 400°F (200°C).
  2. If your carrots are large, halve them lengthwise. Toss the carrots in a bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet. Roast, turning halfway through, until golden and tender, 30 to 45 minutes, depending on their size. If using an air fryer or convection oven, cook at 400°F (200°C) for 15-20 minutes, shaking or stirring halfway through for even browning.
  4. Transfer to a serving dish and enjoy warm.

Notes

- For extra flavor, add a pinch of dried thyme or rosemary to the carrots before roasting. These herbs complement the natural sweetness beautifully.
- If your carrots are very thin, check them for doneness around the 25-minute mark to prevent overcooking. They should be tender when pierced with a fork.
- For a touch of sweetness, drizzle with a teaspoon of maple syrup or honey during the last 10 minutes of roasting. This enhances their natural sugars.
